Spinach and mixed berry smoothie

This is my attempt to start the year off right, however, at this moment there’s coconut cakes baking in my oven, so eating right could be short lived! coconut-cakes-smoothie-056

I think they turned out pretty cute!  They were thank you gifts for people I didn’t get to see on Christmas.  The stomach flu and sinus infections have stopped at our house and so far someone has missed every holiday since Thanksgiving! I completely skipped Christmas 🙁 On a healthy note, I didn’t over eat at Christmas and actually having a smoothie is pretty much all I’ve done for breakfast since Christmas.

I like to start out with oats, just pop them in the bottom of the blender and grind them up.  Some people do protein powder, but I always have oats and they really fill me up and I just feel better about it, because I know what’s in it, oats!

Then add spinach and water and give it a whirl

One frozen banana

Then some mixed fruit, give it a whirl and serve it up with a straw.  It keeps me satisfied until lunch time, I hope it does the same for you!

Spinach and mixed berry Smoothie

1/2 cup old-fashioned oats

1 cup spinach

1 cup water

1 frozen banana

1 cup mixed frozen fruit (I like blueberries, strawberries, peaches, pineapple, mango whatever)

1 tsp of flax-seed or chia seeds

extra water to thin out

Add oats to blender and blend until fine dust, add spinach and water and blend. Add banana and fruit, blend.  Add water until pourable.

Spicy Hummus Made with Sriracha Bushs Beans

I was recently chosen to receive a Chat Pack from Bushs Beans Sriracha Beans! #SrirachaBeansPack #Sponsored It was a lot of fun tasting one of their new flavors, and this was really good!  I tasted them when I opened them and the would be awesome with grilled chicken or pork, and a fun side for burgers and hot dogs.

I decided to do something a little different with them, I made hummus and it was great!  I’ve eaten with chips, veggies, and spread it on sandwiches!

SOOOOOO GOOOOD and if you pick up the beans, you probably have all the other ingredients!  I don’t use tahini, cause in my little part of the world, I’d have to go to a special grocery store to find it and then I probably wouldn’t use it all up and I hate something that you buy for just one recipe and then you’re kinda stuck with the rest of it!

I just drained the beans, and very lightly rinsed them ( I didn’t want to lose all the great flavor that came with them

tossed them in a blender with garlic, olive oil, water, a little chili powder and a little salt, blend and it was awesome! As a matter of fact, it was also dinner….. I just started tasting it and pretty soon I figured what I was doing was not longer tasting, it was called eating!

 

Spicy Hummus with Sriracha Beans from Bush

1 can of Bush Sriracha Beans, drained and very lightly rinsed

1 clove of garlic, peeled and smashed

2 TBSP. olive oil

3 TBSP. water

1 tsp. chili powder

salt to taste

Put everything in a blender or food processor and blend/pulse until smooth. Serve with chips or veggies. Refrigerate.

Strawberry Spinach Smoothie

Last month I made a horrible discovery, I’m allergic to Greek yogurt.  Not a dairy allergy, but to the proteins in Greek yogurt.  This was awful, I eat it practically everyday. I use it in place of sour cream all the time. I need Greek yogurt in my life, but the way it makes me feel, alas I can not have it anymore.  What would I have for breakfast….. I can still eat regular yogurt without adverse effects, so I was eating that, but when I roll out of bed, my feet hit the floor and walk the girls at least a couple of miles, plus I’m busy doing laundry, and everything else that has to be done, and I need a substantial  breakfast. So I started doing this smoothie and breakfast is much better and a little more hearty.  It starts with ground up rolled oats ground up in the mixer

finally frozen Strawberries and add some water to thin it out some and you’re done

oh and there’s a frozen banana in there that didn’t get to the photo shoot on time! I’ve also made it with blueberries and it’s equally as good, so pick your favorite fruit and blend up some goodness for you!

Strawberry Spinach Smoothie

1/3 cup of rolled oats

1 cup of spinach

1 5 oz cup of light strawberry yogurt

1 tsp. ground flax-seed

1 frozen banana

1/2 cup frozen strawberries

5 oz. water

In a blender add your oats and blend until it becomes powdery, then add spinach and blend until broken down.  Add strawberries, banana, flax-seed, yogurt and fill up your yogurt cup with water and add to blender and blend until smooth.  Add more water if it’s too thick.

Serve!
