I love all kinds of salad dressing… I love a vinaigrette that can go on the salad, plus marinate the meat in the salad, yum! But every summer this is by far my most favorite salad. Salty bacon, sweet cherry tomatoes with crisp lettuce and creamy ranch dressing…there’s just something so comforting about this salad, and the ingredients for the dressing is something I always have on hand! I also love adding a little light mozzarella cheese for extra creaminess.
Plus it’s basically healthy, with ingredients you can pronounce, plus you could customize it, say add a little Parmesan Cheese to it, I wouldn’t hate it!
Homemade Ranch Dressing
Ranch Seasoning Mix:
2 TBSP. Dried Parsley
2 tsp. Garlic Powder
2 tsp. Onion Powder
1 1/2 tsp. Dried Dill
1 tsp. salt & pepper
Combine everything in a jar and store until ready to use.
1 5 oz. container plain, non-fat Greek yogurt
3 to 4 TBSP. fat-free soy milk or regular fat-free milk(start with 3 and check consistency)
3 1/2 TBSP. light mayo
1/2 TBSP. Dry Ranch Seasoning
Combine everything in a jar and store in the frig until ready to use.
2 Romaine Heart, cut into strips
1 pint cherry tomatoes, cut into quarters
16 slices of Turkey Bacon, cooked to a crisp and crumbled
3 light mozzarella string cheese, cut into little chunks
Combine salad in a large bowl and drizzle with dressing and serve!
