everything separated with some vanilla wafers, then let everything soften and come together in the refrigerator. SO GOOD! And their individual so that makes them portion controlled! Almost diet food (I always think of pre-portion items as diet), except the heavy cream and the cream cheese and the lemon curd and the vanilla wafers!LOL

Lemon Ice Box Cake

42-48 Nilla Wafer Cookie

4 oz. cream cheese

2 cups heavy cream

2 TBSP lemon juice

1 tsp. vanilla

10 oz. jar of lemon curd

In a large bowl, beat cream cheese until light and fluffy, add cream, lemon juice and vanilla, beat until you can pull the beaters out and you get a nice peak, put filling in a bag to pipe into jars.  Then in 1/2 pint mason jars place 2 cookies pipe in filling, top with a teaspoon of lemon curd and repeat layering process 2 more time, for 3 layers.  Refrigerate for at least 2 hour or more.

Recipe note: I found this out by accident, my heavy cream had started to freeze a little and had little ice chunks in it, but I beat it up anyway and it turned out great.

    My aunt made a lemon ice box cake like this with two exceptions. First, she used dream whip instead of real cream and cream cheese. (Personally, I think your version sounds better.) Second, she called hers a pie. I love making desserts in jars, so your photo drew me to this recipe. Great idea. I can’t wait to try it.

      I love individual desserts(I kinda think of them as diet since they are portion controlled! LOL) I like the idea of real ingredients, even if they are decadent! I hope you try and enjoy!
