Easy Cream Cheese Icing Valentine Cookies+ some tips and tricks to make them turn our perfect every time!

Aren’t these some cute cookies, so tasty, so easy and a great treat for your Valentines! To make them easy, I just used a bagged sugar cookie mix (you can make them homemade, but working with kids, sometimes this is easier) Roll them out

My husband took some 1/4 inch plywood and cut some strips for me, so I have an easy guide to go by when I roll them out! Roll them out on wax paper and there’s no mess to clean up with the flour.

Cut them out, pop them on a sheet pan and put them in the refrigerator and let them firm up.  This allow the butter to re-harden and will keep them from spreading when you bake them, now you will have nice small cookies instead of spread out big cookies that don’t hold they’re shape.

Beat 1 stick of soften butter with a block of soften cream cheese, a little red food coloring and 4 cups of powder sugar (it’s a lot of sugar, but it needs to be really stiff frosting, so it doesn’t ooze out of the cookies)

Bake off your cookies and cool completely then pipe or use a knife to fill your cookies and watch them disappear! Another great Valentine’s Day treat are these Red Velvet Parfaits!

  • Servings: 15 stuffed cookies

1 sugar cookie packet, made according to the directions for rolled cookies

Bake cookies off with the instructions above

1 stick of soften butter

1 8 oz. cream cheese, soften

1 tsp. vanilla

3 or 4 drops of red food coloring

4 cups of powder sugar

Beat butter and cream cheese until light and fluffy, then add vanilla and gradually add the powder sugar. Then add food coloring to a tint you like. Put in a Ziploc bag and pipe frosting between cookies or use a knife to ice cookies and make into sandwiches.
