I made this over the weekend and I ate the whole thing by myself, not sharing with a sole! It’s that good, and it’s basically healthy and a great alternative to have fresh pesto in the winter, when basil not exactly plentiful! Also, no nuts, just a mix of kale, spinach, lemon zest, lemon juice, a couple sun-dried tomatoes, olive oil and grated Parmesan cheese, easy peasy!
I added it to some sauteed shrimp and angel hair pasta, heaven on a plate!
Healthy Kale & Spinach Pesto
2 cups of baby Kale & Spinach salad mix
zest of 1/2 a lemon
juice of 1/2 a lemon
2 cloves of garlic
1/3 cup of olive oil
3 TBSP reduced fat Parmesan Cheese
2 Sun-dried tomatoes
salt & pepper
In a food processor add the kale/spinach and pulse, the zest the lemon, add juice and pulse. Add garlic, oil, cheese, tomatoes and salt and pepper and pulse until combined. Let it hang out in the frig for a little while, then use it on pasta, pizzas or on a sandwich.
