Healthy Turkey Chili!



It’s been a crazy weekend!  Took the dog to have her photo with Santa, got her in the house and the Christmas tree fell down…. what the what, really.



Life…… any way, while getting ready for the holidays on Sunday ummm, I’m going to say, I was cleaning out the freezer, actually I was looking for something I couldn’t find, so I had to empty the freezer…. so while the freezer is empty, I cleaned it out!  Found some ground turkey I’d forgotten about, had some chopped up peppers in there(when peppers are plentiful in the summer, buy extras, chop them up, freeze them and use them in sauces and chili’s during the winter to save $$) so I made chili for dinner.


It’s actually quite healthy, and with the indulgences I’m planning on Friday, I need to keep it light this week! We’re talking Ham, Pulled Pork, Slow Cook Scalloped Potatoes, Tortilla Wraps(so I can say there’s a vegetarian dish on the counter), Old Fashioned Coconut Pie, maybe an Apple Dumpling, Whip Cream and who knows what else!


One thing I’ve found out while eating a healthy lifestyle, is that in order for you to love the food you’re eating, it can’t be boring.  Who’s going to eat Grilled Chicken every night and not go crazy (ok I can eat it like 5 to 6 times a week, but not every night!) Another thing I found out that makes healthy eating more enjoyable, is to add spice to add to the favor and this Chili packs a little spice and a lot of favor.  At the end you add a little Red Pepper, if you have little ones, maybe leave that out, but otherwise, add on!



Healthy Turkey Chili

1 lb. ground turkey

1 green pepper, chopped

1 onion, chopped

2 cloves of garlic

2 cups of chicken stock

1 can of tomatoes with pepper

2 TBSP chili powder

1 tsp.  cumin

1 15 can of black beans, rinse

10 oz. frozen corn

1/4 tsp. red pepper

Brown turkey, with onion, pepper, and garlic until brown and cooked through, then add stock, tomatoes, chili powder, cumin, black beans and corn, bring to a boil and simmer for 30 minutes. Then add red pepper is you choose and cook 5 more minutes.  Top with cheese and chip(optional)
