We’ve been on quite a sugar high over here lately, so it’s time to tone it down and get back to healthy eating again, you know before all the crazy indulgent food for Christmas! So last week I made this healthy Roast Beef and we had leftovers, so this week I made Beef Stew out of the rest. It as rich and beefy and healthy!
Whenever I chop up carrots & celery, I go ahead and clean them all and chop them, put them in containers for lunch and snacks!!!!!!
I chopped up my beef, sauteed some onions and garlic in olive oil, then add the beef and beef broth, let them simmer together. Then add some tomato paste and the last 1/2 hour added carrot, celery and potatoes, simmered for another 1/2 hour and when it was done I threw in some frozen peas
Leftover beef, chopped
1 small onion, chopped
2 cloves of garlic, minced
2 TBSP. olive oil
Saute onion for 3 minutes in olive oil, then toss in garlic and saute for another minute. Then add :
2 cups of beef broth
1 cup of water
and add leftover beef, bring to a simmer and cook for 30 minutes.
2 TBSP tomato paste
2 carrots, diced
2 stalks of celery, diced
2 potatoes, diced
Add tomato paste, carrots, celery and potatoes, simmer an additional thirty minutes. Remove from heat and toss in a cup of frozen peas.
