This is the last post on quick treats for the holidays. We had Peanut Brittle, so good, Easy Turtles, and Chocolate Covered Peanuts Bark, all easy and quick to make for anyone on your holiday list. This Microwave Caramel Popcorn is also quick and easy, so don’t let the fact it takes about an one hour and fifteen minutes to make, only 15 minutes is actually hands on time, the rest it bakes in a low oven to set the caramel and all you have to do is stir it around every 15 minutes.
Besides, it will give you time to do this super cute craft with your kids
How cute are these candy sleds!!!!! Just 2 candy canes, topped with a Kit Kat, then 10 miniature candy bars, loop around a ribbon & top with a bow. Some little boys in my neighborhood will be very happy this Christmas.
On to the caramel corn, you know I’m not afraid of using the microwave when making treats if it’s doable and this recipe is microwave doable.
Microwave Caramel Popcorn
2 bags of microwave popcorn, popped with the un-popped kernels removed
3/4 cup of brown sugar
6 TBSP. butter
3 TBSP. light corn syrup
1 tsp. salt
1 tsp. vanilla
1 tsp. baking soda
Preheat oven to 250 degrees. Place popped corn in a large bowl, and in another bowl, add brown sugar, butter, corn syrup and salt. Microwave 2 minutes, stir and microwave another 2 minutes. It should be boiling at this point, add baking soda and vanilla, stir. Pour over popcorn and coat all the piece. On one large or two regular sheet pans, pour popcorn out so it’s spread out and bake for an hour, just toss it around every 15 minutes.
Baking it keeps the popcorn from sticking together and getting gummy!
