This soup is perfect for this time of year, it’s a little chilly and you probably have leftover chicken/turkey to use up!

While I was cutting up celery and carrots for this soup, I went ahead and cleaned all the celery and carrot & cut them into pieces perfect for dipping, or you can chop them up and use them in other dishes. The important thing is you have a healthy snack on hand so you are ready with the Hungries hit. And that’s an important thing when you’re trying to eat healthy, have things on hand so you don’t snack on something bad for you.
This soup is real simple, but really good and healthy for you.
Healthy Chicken/Turkey Soup
2 cups of cut up, cooked chicken/turkey
2 stalks of celery, chopped
2 carrots, chopped
1/2 onion, diced
2 cloves of garlic, minced
4 cups of chicken broth, if you want it thinner, use some water
6 oz spinach
8 oz. No-Yolk egg noodles
In a large sauce pan, combine broth, celery, carrots, onion and garlic and simmer 10 minutes or until everything is softening. Add in chicken and noodles and simmer for another 10 minutes and then add spinach and cook until just wilted.
