Lasagna

 

 

A couple of weeks ago, our town celebrated Home Coming with all kinds of festivities, including a parade, crowning the Home Coming King & Queen, so much fun!  We had a few people over for dinner before everything started, and Lasagna is a perfect main dish.  Hearty, make ahead and feeds a crowd.

Layers of noodles, home made sauce and cheese! Pair with cheesy bread on the side and a salad and dinner’s done

 

Lasagna

1 lb. lean ground beef

1 lb. hot breakfast sausage

2 cloves of garlic, minced

1 28 oz. can of petite diced tomatoes

2 cans (6oz) tomato paste

2 TBSP dried parsley

2 TBSP dried basil

3 cups low fat cottage cheese

2 eggs, beaten

1/2 cup grated Parmesan Cheese

2 TBSP parsley

12-15 slices of mozzarella cheese

8 Lasagna noodles

salt and pepper

In a large skillet or dutch oven, add beef, sausage and garlic. Cook on medium heat until done, about 10 minutes.  Meanwhile, bring a large pot of water up to a boil and cook noodles to just done. In a bowl combine cottage cheese, eggs, Parmesan cheese and parsley. Be sure to salt noodles, and salt and pepper sauce and cheese mixture.   In a 13 x 9 baking dish, put just a little sauce on the bottom of the pan, top with noodles, spread 1/2 the cottage cheese mixture, top with mozzarella cheese, and little less than 1/2 sauce mixture.  Repeat the layers again, ending with meat sauce mixture on top then add a generous sprinkle of Parmesan cheese.  Either freeze, refrigerate, or bake immediately at 350 degrees for 20 – 30 minutes until is hot bubbly.
