Healthy Taco Salad


I love Mexican food!  The hubs has been out of town recently, so since my daughter shares my love of Mexican, we been having it a lot.  But keeping Mexican healthy, isn’t as easy as it looks  The best advice, be careful with portions sizes, add as much greens and veggies as you can, to keep it healthy.  Plus eat at home, then you can control all the ingredients.

In this recipe, I use healthy ground turkey, plus black beans.  It really bulks up the filling, with lots of lean protein to keep you filled up!  Serve it on top of healthy Romaine lettuce, some tomatoes, a dressing made of Greek yogurt and salsa, a little healthy string cheese if you want cheese, and you’re all good!



I actually used dried beans, that I had cooked off in my slow cooker and froze, but canned beans, rinsed work great, use what you have.   The turkey is very lean, but with the beans in the mix, it keeps it super moist plus it stretches you food dollar.  Beans are super cheap, whether you use dried beans(the cheapest or canned beans, still cheap) and it’s makes your filling go further, plus the health benefits from all the fiber you get from them.  Make up a big batch of taco seasoning, so you can use it for this recipe, as well as having on hand for future uses.TACO SALAD

Healthy Taco Salad

Home Made Taco Seasoning

3 TBSP. Chili Powder

1 TBSP. Cumin

1 TBSP. Garlic Powder

2 TBSP. Paprika

1 TBSP. Onion Powder

1/2 tsp. Cayenne Pepper (optional)

Add 2 to 3 TBSP to lb. of ground meat with 1/4 cup of water, cook until water is absorbed. Makes enough for 3 lbs. of meat.

1 lb. ground turkey

1 1/2 cups of beans or 1 can of beans, rinsed

2 to 3 TBSP of taco seasoning

1 5 oz. container of Greek yogurt

1/2 c. salsa

1/4 c. water

romaine lettuce


grated cheese

Brown turkey in skillet until cooked through, then add beans, taco seasoning (2 to 3 TBSP. add more for more favor) and water and simmer until water is absorbed.  Add yogurt and salsa to a bowl and stir together.  Serve meat mixture atop lettuce and tomatoes and drizzle on dressing.
