Some days I just need comfort food and chicken nuggets are comfort food to me. Best part kids love them too, so everyone can eat the same thing. Seriously, life is just going too fast and I can’t get anything done, life slooooow down!
This recipe is seriously simple, but so flavorful, if the kids don’t go for the spicy barbecue dip, use this Honey Mustard Dressing, also awesome.
Cut your chicken into chunks (it’s easier to do if they are slightly frozen)
A couple of egg whites with a couple drops of hot sauce (it won’t make them hot, just pump up the flavor some), and in a separate bowl, add whole wheat panko bread crumbs, and Parmesan Cheese, sprinkle chicken chunks with salt, pepper and garlic powder.
Then put them on a baking sheet lined with parchment paper, on top of a cooling rack, and bake at 425 for 15 – 20 minutes. You don’t have to flip them, because the bake all around on the cooling rack and don’t get soggy, because any liquid falls on the parchment paper!
While their baking, chop a chipotle chili and add it to your favorite barbecue sauce ( I go with a reduced calorie sauce) and mix together. Let the mixture hang out while they bake, and seriously a great dipping sauce that everyone will enjoy.
Healthy Chicken Nuggets with Spicy BBQ Sauce
1 lb. chicken breast, cut into chunks
2 egg whites
3 to 4 drops of hot sauce
1 1/2 cups whole wheat Italian bread crumbs
1/2 cup reduce calorie Parmesan Cheese
1/2 cup reduce calorie Barbecue Sauce(I get Krafts)
1 to 2 chipotle chilies chopped
In a bowl, combine egg whites and hot sauce, in a separate bowl combine bread crumbs and cheese. Liberally sprinkle salt, pepper and garlic powder over chicken chunks, then dip them into the egg whites mixture, then in the bread crumbs and then put them on the cooling rack/baking sheet.
Bake at 425 for 15 to 20 minutes. Combine barbecue sauce and chipotle chili. Enjoy!
