My daughter & I try to exercise regularly, Zumba, Spinning Class, plus running, ugh…. with all that activity can’t I at least eat what I want?!? Nope, not if I want to fit into my jeans….
So this recipe comes in handy, quick, healthy and easy. To make it easy and fast, I use frozen veggie medley, cut the chicken in small pieces and boom it’s done. You can serve it over rice or just eat it on it’s own. Either way, it’s goooood!
Quick & Healthy Chicken Stir Fry
1 lb. chicken breast, cut into small pieces
2 TBSP olive oil
2 TBSP soy sauce
1/2 tsp. ground ginger
1 tsp. garlic powder
1 16 oz. bag of veggie medley, your choice, thawed
1 cup of chicken broth
3 TBSP corn starch
Saute chicken in olive oil in a non-stick pan for about 3 minutes, then when it’s brown, stir and brown on the other side. While chicken is cooking mix soy sauce, ginger, and garlic powder in a small bowl. When the chicken is done cooking, add soy sauce mixture, then stir in veggie medley and cook for 5 minutes. While it’s cooking mix chicken broth and corn starch together, then stir into veggie, cook for another 5 minutes until it thickens.
