Most of the time I make Coconut Cream Pie, like here, but sometimes I’ll make this simple Coconut Pie, top it with whip cream and toasted coconut.  It’s really simple, comes together really fast and best of all, you probably have all the ingredients

I use a store bought pie crust, that I had let come to room temperture, put it in the pie pan, then refrigerate again before putting my filling in(this makes it firm back up & it will bake up much better for you).  Eggs, milk, flour, sugar, butter and coconut.  Combine all those ingredients, pour the shell, bake and your done!

Now just top with whip cream & toasted coconut and you have a beautiful dessert for the week

Coconut Pie

4 TBSP melted butter

2 eggs, beaten

1 TBSP flour

3/4 cup sugar

1 cup shredded coconut

1 cup milk

1 pie shell

1 cup heavy whipping cream

1/4 cup sugar

1 tsp vanilla

1/2 cup coconut, toasted

Preheat oven to 350.  In a large bowl, combine butter, eggs, flour, sugar, coconut and milk.  Pour into uncooked pie shell and bake for 30 to 45 minutes.  Pie should be light brown and jiggle just a little, but basically firm. Whip cream until stiff, add sugar and vanilla.  Spread on the pie, then add toasted coconut.

      Yes, but the big thing is the will stay standing up when baking. Sometime if the pie crust is a room temp when you bake it, it will fall down and not turn out pretty. Chilling it help that. If your crust is getting too brown while baking, put some strips of tin foil around it and that will keep the crust from getting too brown.
