I know it’s old school, but guess what, in my family, as I’ve said it before, we are not adventureous people, so for the first time, I made spinach and artichoke dip and actually eating it too!
AND it was awesome! Cheesy goodness with vegetables, the best way to consume veggies, LOL!!!!!!!!!!!!!
Spinach & Artichoke dip
1 stick of butter
1 shallot, chopped fine
2 cloves of garlic, mined or grated
1 jar of marinated artichoke, drained. rinsed & chopped
8 oz. sour cream
1 block of cream cheese
1 10 oz. box of frozen spinach, thawed and wrung out with a kitchen towel
3/4 cup of cheddar cheese
1 cup of Monterey Jack Cheese
salt & pepper
Start by sauting the scallion and garlic in the butter in a large skillet. Saute for 3 to 4 minutes until they are soft, then add artichokes and cook 5 more minutes. Add in cream cheese, sour cheese, spinach and cook for 5 minutes. Stir in cheeses, salt and pepper and pour in to casserole dish and bake at 375 for 15 minutes or until hot and bubble and cheeses have all melted. I had everything done but baking it off for the company we had over, so you can make it all ahead and just bake it off when your ready to serve, making it an easy dish for the holidays
