Grilled Pork with Peacch Salsa



Even though summer is coming to an end, I don’t give up grilling.  I’ve been known to grill on Valentine’s Day, if it’s not snowing you can grill.  It might not be as comfortable as grilling in the summer, but it can be done.  This past summer, we treated ourselves to a new grill, one that has a gas grill on one side and a charcoal grill on the other side.  We don’t use the charcoal side as often as the gas side, but I really love the charcoal side.  The flavor of the smoke is awesome, however this recipe is great on either side.

It’s a nice light recipe that features a lean pork lion, marinated in peach preservers, jalapeno, garlic, olive oil and apple cider vinegar

The jalapeno’s won’t add spice, just a nice flavor, just let it hang out in the frig for a while.


Meanwhile, make a nice salsa to top it after you grill it up

Add some garlic, red onion, jalapeno, peaches and lime juice, to a bowl, season with salt and pepper.  Let everything marry together while hanging out in the frig with the pork lion.


Grill Pork Lion with Peach Salsa

1 to 2 lb. pork lion


1/4 cup peach preservers

1 jalapeno, sliced

2 cloves of garlic, roughly chopped

3 TBSP olive oil

1 TBSP apple cider vinegar

Add everything to a bowl and combine everything together, put the pork lion in a Ziploc bag and pour marinade over let it sit in the frig at least 2 hours to over night.  Put it on a grill heated to medium and grill 20 to 30 on all sides until a meat thermometer reads 155, then remove from grill, cover with foil and let it stand for 15 minutes before slicing

Peach Salsa

1 jalapeno, seeded, deveined and chopped finely

1/2 a purple onion

1 clove of garlic, minced

1 large peach, diced

1 lime, juiced

Combine everything in a bowl, season with salt and pepper at least 2 hours before serving.

Slice the pork and top with salsa

I served mine with grilled mixed veggies, I just chopped up leftover onion, garlic, green peppers, yellow squash, zucchini, olive oil, salt and pepper and while I was grilling the pork, I grilled this in a grill pan and dinner was done. Everything light and healthy!
