This is a wonderful teacher’s gift for the first day of school, or a special breakfast for a holiday. They are quick to prepare so you could easily make them any morning of the week and it only takes 15 minutes to bake. Starting with cake mix makes them fast to make, then just scoop them in a mini muffin pan and top with a wonderful cinnamon sugar mixture that makes the crunchy and delicious. While they’re baking make a glaze to go on top. YUM!
This recipe makes 48 so you’ll have plenty for a party and the last very well for a few days so you can make them ahead!
Start with cake mix, vanilla pudding mix, eggs and oil, mix well
Scoop into well greased mini muffins pans
then pile on the cinnamon sugar mix

When they bake up the cinnamon and sugar caramelizes into a wonderful crunchy topping that stands up well to the glaze, whether you choose to dip them into the glaze or just drizzle some glaze on them.

Cinnamon Roll Mini Muffins
1 box of yellow cake mix
1 box of vanilla pudding mix, servings 4
3/4 cup of oil
1 cup brown sugar packed
2 TBSP cinnamon
1 cup confectionery sugar
3 TBSP milk
1 tsp vanilla
Mix cake mix, eggs, pudding and oil in bowl and 2 minutes. In a well greased mini muffin pan, scoop batter in cups. Mix brown sugar & cinnamon and top each muffin cup. Bake 15 minutes or until done and remove from oven. Let them cool on the counter until complete cool, meanwhile, mix milk, confectionery sugar and vanilla. When the muffins are cool dip or drizzle with the glaze. If you dip them you may have to make more glaze and we couldn’t decide which way we like them better!
