Summer may be winding down, but the squash crop isn’t, so I like to enjoy it as long as possible and this simple saute is a great quick way to enjoy this veggie.
It cooks up super quick, and you probably have all the ingredients in your pantry. I love it with this
Grilled Chicken, it keeps everything nice and light.
Just chop up your squash, zucchini with a little minced garlic
Saute up the garlic in some olive oil
Toss in the squash with Italian seasons, saute the add Parmesan Cheese and serve!
2 medium squash, sliced
1 clove garlic, minced
1 TBSP olive oil
1 TBSP Italian seasonings
salt & pepper
2 TBSP Parmesan Cheese
Add garlic and oil to large skillet and saute on medium for a minute, then add squash and seasoning. Saute until lightly brown, add cheese, stir and serve
