Yeah, I ‘m in a mood for Mexican.  This is the second recipe in the last few days.  First it was Crock Pot Chicken Tacos, which are amazingly good and so simple to make.  Then for Meatless Monday, here’s a recipe for Bean Burritos, all you need  Margarita, and who doesn’t need a Margarita on Monday!


These burritos are soooo filling, you don’t miss the meat at all, and such a fast meal, it’s great for busy back to school nights that are either here for you or just looming ahead for you!

My daughter’s still got a few days of freedom left before back to school, but very soon it will be rushing to class and then rushing to one of the two jobs she has, so it’s great to have a few quick meals that she can take with her for lunch or dinner.  And this burrito recipes is a very quick meal, while your simmering the beans you can get the toppings ready, land everything on the table with salsa and chips or put this bean burrito over a salad or rice for a burrito bowl.


You start with a little onion and garlic sautéing in a pan

Then add a little Chipotle Chili Seasoning

Then the beans and a little water, let it simmer, then mush them up a little and stir in some fresh or jarred salsa and when it’s warmed through,

Serve it on some warm wheat tortillas, with

Chipotle Bean Burritos

1 TBSP olive oil

1 clove garlic, minced

3 TBSP onion, chopped fine

1 tsp. Chipotle Chili Powder

1/3 cup of water

1 15 oz. can of Black Beans, drained & rinsed

1 15 oz. can of Kidney Beans, drained & rinsed

3 TBSP prepared salsa

6 Whole Wheat Tortillas

1 cup of cheese



Chipotle Sauce

Salt & Pepper

In a non stick skillet, heat oil and add onion and garlic, stirring for a minute, then add chili powder and a pinch of salt.  Cook for 3 seconds, then add water and beans, bring to a boil, reduce and simmer 10 minutes.  Remove from heat and mush the beans slightly, so some are whole and some are mushed, stir in salsa.  Serve on warm tortillas, with lettuce, tomatoes, cheese and chipotle sauce
