Don’t these little cuties look like their ready for a picnic, all self contained and such! And since they contain bananas, I think they can be classified as health food…..


I do love making desserts that are contained in mason jars, first, their portion controlled, second, easy to give away, and third, portable.  These come together so easy, I actually got home from work late and still had time to throw them together.

add some butter, put a couple tablespoons in a jar and tamp it down

Mix together, banana cream jello pudding mix, sugar, milk and some vanilla.  Let it set for 5 to 10 minutes, I chopped up lettuce for a salad and made Yogurt parfaits for breakfast while it set.  Then I add Cool Whip to the mixture and put the banana cream filling to a plastic bag

and pipe one layer over the cookie crust(I’m not talented enough spoon it in, if you are skip the plastic bag step!)

add bananas, pipe another layer of banana cream pie filling, then more bananas and put in the frig along with a bowl and the beaters to your mixer

After everything has chilled, add heavy cream to your cold bowl and whip until thick, then add sugar and banana flavoring and top parfaits

Banana Cream Parfaits

  • Servings: 7 to 8 1/2 pint container

20 to 30 vanilla wafers

3 TBSP of melted butter

1/2 cup of sugar

1 cup of milk

1 box instant Banana Cream Pie Pudding

2 TBSP vanilla

8 oz. Cool Whip

2 bananas slice thinly

1/2 cup of heavy cream

2 TBSP sugar

1 tsp. banana flavoring

Crush cookies in food processor or blender then add melted butter and pulse a few times to combine.  Add cookie crumb crust mixture to the bottom of your jars and tamp down, set aside.

In a bowl combine sugar, milk pudding, and vanilla and whisk for 2 minutes, set aside for 5 – 10 minutes. After it has started setting up some, fold in Cool Whip just until mixed.  Add mixture to plastic bag, snip a corner and pipe into a jar 1/2 way up, the add 4 banana slices then pipe until just below the lid line on the jar and top with 4 more bananas, refrigerate.  Also refrigerate a bowl and the beaters to your mixer.  After chilling at least 30 minutes remove bowl and heavy cream from refrigerator.  Add heavy cream to bowl and beat with mixer until thick, then add sugar and flavoring.  Add whip cream to plastic bag, with or without a decorators tip and pipe whipped cream on top of bananas.  Serve immediately and refrigerate leftovers.
