We had amazing food weekend!  I’d love to take credit for it, but I was just blessed with awesome ingredients.  Friday night we had an Eastern Shore night, steamed crabs, shrimp, steamed & fried, corn, watermelon, ice cream sandwiches and peanut cheesecakes. AMAZING!!!!!  With those ingredients you can’t go wrong, I live in a rural area and sometimes that’s a pain, but sometimes it’s amazing, because when you live 30 minutes from getting everything fresh, and cheap, it’s worth the pain!

I get so busy doing everything I forget to take pictures of everything, but here’s the ice cream sandwich!  It was a great time with friends and family, great fresh food prepared as simple as it gets and sometimes simple is the best way!

Saturday night, we were also blessed with fresh tuna, something you will not see often here.  This past week, friends fished in the White Marlin Open and caught a huge tuna which actually placed in the competition.  They shared their bounty and I prepared it in a very simple way, so it let the tuna truly shine because it’s so good on it’s own, it doesn’t need complicated preparation.

I simply took beautiful filets drizzled with olive oil and sprinkled Lemon Pepper seasonings

Having great, fresh ingredients make eating healthy so simple!  I served it with fresh potatoes that were tossed in this herbed butter, soooo gooood!

2 tuna steaks

4 TBSP olive oil

2 TBSP Lemon Pepper Seasonings

Preheat charcoal grill or gas grill to medium. Drizzle tuna steaks with 1/2 the olive oil on one side and 1/2 the Lemon Pepper Seasonings on one side.  Grill season side down and season the other side with remaining oil and seasoning.  Grill 5 to 7 minutes on one side and 5 minutes on the other side.  Cook to your desired doneness, I like it medium  because I think the flavor is best that way.
