This is a delicious grilled chicken sandwich with bacon, cheese and a honey mustard sauce that you can use on the sandwich, but add a little olive oil to and it becomes a dressing, I love a double duty use for anything!
and they have an awesome grilled chicken sandwich topped with honey mustard, but because of life and renovations we haven’t gotten there much this summer, and going to a place like this in the winter, when it’s cold and snowy isn’t as much fun as you might think! It’s always hard for me to believe that it can look like a tropical paradise for six months out of the year, and then go to bleak and brown for six months.
Anyway, I decide to recreate their recipe, which has grilled chicken, bacon and melted cheese, plus the honey mustard sauce, yummmmmmm…..
I started out by frying the bacon first(I went for a walk after frying the bacon and left it on the counter, never do that, my husband came home before I got back and I had to fry more bacon), then I grill this chicken that I had marinated and when the chicken was almost done, I topped it with bacon and shredded cheddar cheese. It was awesome! Because it was a sandwich, it was still a light dinner, but very hearty!
Pounding out the chicken helps with any leftover frustrations of the day and helps it cook evenly!
Melt cheese & top with sauce, serve!
At first my husband was disappointed because we weren’t having bacon sandwiches, until he tasted these chicken sandwiches!
If you have little ones, you may scale back your sandwiches, because these sandwiches filled the hubby up
So anywayyy, I love this sandwich at our favorite lunch place, but now I can have it at home.
Grilled Chicken Sandwiches with Honey Mustard Sauce
Chicken Marinade found here.
Before marinading 1 lb of chicken breast, slice the chicken breast across the top into three pieces, then pound out until flat and uniform in size, then cut each piece in half, so it fits on your roll better.
Marinate chicken 30 minutes to 2 hours.
5 to 6 slices of bacon, cut in half
1/2 cup of shredded cheddar cheese
3 to 4 Kaiser rolls
Honey Mustard Sauce:
1/4 cup spicy brown mustard
1/4 cup honey
2 TBSP Dijonnaise
2 TBSP Plain Greek Yogurt
1/2 TBSP dry Minced Onion
1 1/2 tsp olive oil
Combine sauce ingredients together and set aside.
Heat grill to medium, and grill chicken for 3 to 5 minutes per side, meanwhile fry bacon to desired crispiness. When chicken in almost done top with bacon and cheese, grill until cheese melts. Put a generous dollop of Sauce on each roll and add chicken, serve!
I used two pieces of chicken for each sandwich, but you could probably get away with only one piece of chicken to make it go further.
