Chocolate Texas Sheet Cake

This is a big ole chocolate cake, and it is soooo good!  I mentioned a couple of weeks ago, that I helped out with a retirement party, and I introduced you to a Coconut Texas Sheet Cake, but I also made a chocolate one too!  They’re an easy cake to make when you want to make something that will feed a lot of people, and they’re very good!

We had a busy weekend, we helped out with a fund raiser, Canoe Jousting!

Teams of three, one in front & one in back, with a person in the middle on a platform.  Your team tries to knock down the person in the middle over board.  It was a lot of fun and a nice little fund raiser for our Fire Department. So after a day of wrapping hamburgers and hotdogs, yesterday we cleaned the laundry room and painted the ceiling. Fun Day!

Back to the cake, it’s fudgy and chocolately and just yummy!

I start by making buttermilk.  I don’t usually have this on hand, but I have vinegar and milk and you can make buttermilk from those two ingredients. I put one teaspoon of white vinegar in a measuring cup, then add enough milk to the measuring cup to equal a 1/2 a cup.  Let it stand a few minutes and it will thicken up like buttermilk. Job done and didn’t have to buy something you have to hurry up and try and finish.

While that’s thickening, in a bowl add flour sugar and salt

Then in a sauce pan melt butter, add cocoa powder and stir together

Add hot water and allow mixture to boil for 30 seconds. Remove from the heat

To the buttermilk, add eggs, baking soda and vanilla. Why yes it does have a little chemical reaction!

Now stir the buttermilk mixture into the chocolate mixture, when mixed together pour onto a large greased (18 x 13) sheet pan.

Bake at 350 for 20 to 25 minutes.

While it’s baking, let’s make icing.  Now I recommend that you wait until the cake is almost done, then you have less time to sample the icing…. It’s really good!

Add butter to a sauce pan with cocoa. milk, powder sugar, and little vanilla, then just pour over the cake.  Heaven!

Recipe:

Buttermilk:

1 tsp of white vinegar

milk

put vinegar in a measuring cup then top with milk until it reaches the 1/2 cup mark

Cake:

2 cups of flour

2 cups of sugar

pinch of salt

Mix in a bowl and set aside.

2 sticks of butter melted in a sauce pan

4 Tablespoons of Cocoa

1 cup of boiling water

In a sauce pan melt butter and add cocoa, stir until completely blended and no lumps. Add boiling water, and boil mixture for 1 minute.Turn off the heat and add it to the flour mixture, stirring to combine and cool.  

2 eggs

1 teaspoon of baking soda

1 teaspoon of vanilla

Add eggs, baking soda and vanilla to buttermilk and whisk to combine, then add to chocolate mixture and stir. Pour onto greased 18 x 13 sheet cake pan and bake at 350 degrees for 20 to 30 minutes

Icing:

1 3/4 stick of butter

4 Tablespoons of Cocoa Powder

6 Tablespoons of milk

1 teaspoon of vanilla

1 lb of powder sugar

Melt butter in sauce pan, add cocoa and whisk to combine.  Remove from heat, add milk, vanilla and powder sugar and whisk until there are no lumps and it’s smooth. Pour over warm cake and let it stand to cool and cut into squares.
