Restaurant Style Salsa

Nothing starts a party better than some crunchy bites of nacho chips and mildly spicy salsa.  For cooking, I like chunkier salsa, but for eating I love the smooth salsas you get at a restaurant, and this salsa delivers!

One thing I like about it, is you can make year round, because you use canned tomatoes, so if tomatoes aren’t in season, you can still make this, if you can find a jalapeno pepper., I also love that it’s smooth, a little spicy, and really easy to make for a party, or just because.

Cast of characters, fire roasted tomatoes, Rotel tomatoes, jalapenos, garlic, onion, lime juice and salt and pepper.

Put tomatoes and chopped onions in a blender or food processor, then

Grate in garlic, then add cumin, salt, pepper, chopped jalapeno pepper and lime juice, then blend until smooth and allow it to chill, done!

This is an awesome appetizer or just get to have as a nibble around the house.  It makes about a quart

1 15 oz. can of fire roasted tomatoes

1 15 oz. can of Rotel (I get mild, if you want it hotter, get hot)

1 small onion diced

1 jalapeno, diced ( I put the whole pepper in, if you want it mild add just the pepper, not the seeds)

1 TBSP lime juice

1 tsp. cumin

2 cloves of garlic, grated

salt & pepper

Blend or process until well blended and pureed
