This recipe was inspired by the 4th of July, red, white & blue and keeping it healthy. Starting your day off with this breakfast means you won’t have to feel as guilty later in the day when you indulge at the cookouts going on.
Bonus, I have breakfast for four days when I make these, so making a healthy choice for breakfast is easy.
This is a perfect time to make this breakfast because a lot of fruits are in season right now so come up with your own combo that works for you. I found some great strawberries and blueberries at the farmer’s market and thought 4th of July. I took my berries home, hulled my strawberries, wash them and the blueberries,
put them on a sheet pan that fits my in freezer and left them in the freezer for a couple hours. This is something I always do when I buy fruit, if I’m not going to use it right away, freeze it so it doesn’t become a science experiment in the frig. You can always use it in smoothies and overnight oat and it’s great just to snack on.
You can do the overnight oats with whatever fruit you want, but I find it’s better with frozen fruit, because the extra moisture from freezing them helps the oats bloom.
For today’s oats, I did strawberry and blueberry yogurt with frozen strawberries and blueberries. But other combinations could include peach and vanilla yogurt with frozen peaches and mangoes. Cherry and vanilla yogurt with frozen cherries and fresh bananas. Whatever you have or whatever you like is the best combination for you, so just let your imagination go wild. Back to today I took old fashioned oats then added two containers of strawberry yogurt and two containers of blueberries and one yogurt container of soy milk Stir it together put two to three heaping tablespoons in each pint jar then top that with 1/2 a banana, a few blueberries then a few strawberries then the rest of the yogurt the other 1/2 of your banana and more blueberries and strawberries.
Let them sit in the frig overnight and in the morning enjoy a healthy, protein packed breakfast plus you’re well on your way to fulfilling your fruit quota for the day.
It’s one of my favorite breakfast to have plus it’s ready to go with you out the door if you need it too!
Recipe – 4 pint jars
2 of each, strawberry & blueberry Greek yogurt 5 oz
1 1/3 cups of old fashioned oats
5 ozs. of milk ( whatever you have is fine)
4 bananas, sliced
1 cup of frozen blueberries
1 cup of frozen strawberries
In a bowl combine oats, yogurt and milk, stir to combine. Put two to three heaping TBSP in the bottom of each jar
top with 1/2 a sliced banana the a few blueberries and strawberries. Do another layer of each, cover and refrigerate
overnight to allow the oats to bloom. Serve and top with granola from this recipe!
