One of the greatest things to have in the summer is a Bacon, Lettuce and Tomato Sandwich, with lots of mayo, squishy bread, crisp lettuce and a juicy tomato! That’s one of my favorite childhood memories and something I still love today, but squishy white bread, although very good, not great for the waist line and mayo, yeah I don’t do it very often.
So this salad is one of the best ways to enjoy the BLT experience without the guilt of the full on sandwich.
I really love the tanginess of the dressing from the apple cider vinegar, the spiciness of the mustard and it goes really well with the saltiness of the bacon. The calories I miss from the bread and mayo I feel it’s ok to add a little shredded cheese!
First make your dressing, combine fat free Greek yogurt, spicy brown mustard, apple cider vinegar, honey, salt and pepper. Let it hang out in the frig to marry together.
Then if your lucky go out to the garden, pick a few tomatoes, some lettuce, wash and clean them up. I only used three pieces of thick cut thick bacon, and I just quickly pan fried them.
This made a perfect lunch to pack up and take on the road Sunday. Just put a nice layer of fresh lettuce in a bowl, then chop up your tomatoes and cooled bacon and top your lettuce. Then drizzle on your dressing and sprinkle with cheese. I did that and took it with me and ate about 2 hours later and it wasn’t globby, I think because theres no oil in the dressing. The dressing is also good on chicken strips and sweet potato fries.
Recipe: Dressing –
1/4 cup of plain fat free Greek yogurt
1/4 cup of spicy brown mustard
2 TBSP of applice cider vinegar
1 TSBP Honey
Salt & pepper to taste
4 cups of lettuce
3 to 4 tomatoes chopped
1 lb of turkey bacon, browned and crumpled
Combine Greek yogurt, mustard, vinegar, honey, salt & pepper in a jar and shake well. Refrigerate for at least an hour before using & you can keep it for up to a week
I did an individual salad, but you could do one large salad and it would be enough to feed about 3 people
In a large bowl put the lettuce in first, then chopped tomatoes and bacon, then drizzle the dressing and a sprinkle of cheese.
