Ahhhhhh spring is finally here!!!! Grilling season is on, yes and yes we are grilling again this post because most people view the world as having four seasons, I see it as Winter, Fall and Grill season, which depending on the weather you can grill in fall and winter. Frequently we grill for Valentine’s Day, because what says love better than grilled steak!
However, the best part about grilling season/spring/summer is grilling is a healthy way to eat your protein and today’s recipe is a good and healthy recipe.
some chicken breast cut into tenders, lemon juice (because the acid will tenderize the chicken + flavor the chicken), garlic, thyme, and olive oil(it was shy and didn’t show for the photo shoot), marinade for a few hours, and grill off
I served mine over a salad with a dressing made of olive oil, apple cider vinegar, thyme, salt and pepper to marry great with the grilled chicken.
1 1/2 lbs chicken breast
juice of one lemon
2 TBSP olive oil
2 cloves garlic
2 TBSP fresh thyme
Salt and pepper
Combine lemon juice, olive oil, garlic, thyme in a jar or bowl, and combine, pour over you chicken in a ziploc bag, and let marinate at least 30 minutes to over night(not longer or you chicken’s texture will change) Add chicken to a medium hot grill and grill for 3 to 5 minutes per side depending on the thickness of your chicken until done, let it rest a few minutes on your cutting board and serve over salad greens with your dressing
