This is a great light, springy summery dish, that come together in no time, which is great for this time of year! Plus healthy and on the grill so it’s a win win!
So this happened this past weekend, this great girl and her momma completed their first 5k run. It was an awesome event, we had a great time and it was for a great cause. The run benefited a great man that was a huge part of our community.
So in keeping with healthy, this salmon dish is healthy quick meal that’s perfect for a weeknight dinner or when you have company over and want to impress. Add a side of rice and a salad and dinner is served!
a few simple pantry ingredients, throw it on the grill
and in no time you have dinner. I was hoping for more grill marks, but I’m working with a new grill and I’m still learning it, but grilling it makes a different taste, smokey and juicy. You could bake it in the oven on a sheet pan for about 15 minutes, but if you can use your grill, take it outside!
4 salmon fillets
2 TBSP Dijon mustard
2 TBSP Honey
1 lemon juiced
Combine mustard, honey and lemon juice in a bowl, and heat your grill to medium. Put salmon fillets on the grill and brush on mustard sauce and grill of 3 minutes turn and baste other side for 3 minutes. Before removing from the grill I turned one last time and basted the other side one more time. Remove and serve. I served mine with a salad, and made a dressing of Dijon mustard, honey, a splash of vinegar and a couple tablespoons of olive oil to go along with the salmon favors. I had some leftover for a great lunch the next day.
