My family has a problem! They don’t like leftovers, I say it’s because they don’t cook – If you cook, you like leftovers, because you don’t have to cook!!!!!!! So what are you to do after a big family holiday and you have a bunch of leftovers, enter Leftover ham Kabobs!
I like serving kabobs because it’s a one stick meal – meat and veggie combined, kinda a one pot meal for the grill. The only complain from the fam about normal kabobs is there not enough meat, with leftover ham kabobs, not a problem, because usually you have a lot of ham leftover, so load those skewers up! Also, if you’re new to grilling this is a great recipe, because the meat is already cooked, so you don’t have to worry about it not being cooked through, and the glaze keeps the juicy and compliments the rub.
So that this and make that
Start with leftover ham, like from this post Easter post cut up in chunks,
1 green pepper cut in 1/2 inch pieces
1/2 a large red onion in 1/2 inch pieces
1 can of pineapple chucks, drained but reserve the juice
1 cup of barbecue sauce
2 teaspoons seasoning salt
Start by skewering you meat, pepper, onion and pineapple chunks on wooden skewers and set aside. In a small saucepan, add barbecue sauce, 2 TBSP of reserved pineapple juice and season salt and simmer for about 5 minutes until thicken. Heat grill to medium, add skewers turn after 4 to 5 minutes and baste one side of the skewers, turn again and baste again until veggies are soft and grill marks on the ham. Reserve any leftover glaze to serve with kabobs!
