AMAZING! was the reply when I packed these for my daughters breakfast! Of course this is a kid that eats a toasted bagel with peanut butter almost every morning, so anything new might be amazing! If she wasn’t so picky, she’d have a bigger variety for breakfast….. just saying
I’m always looking for portable food for her, because between two jobs and going to college full time she’s not home a lot, plus being 20 being at home isn’t her favorite activity. These are a great side dish or breakfast and the best part is you can make them ahead then just heat them up when you need them. I make these ahead, wrap them in foil and freeze them then just pop them in the oven to heat them through and throw them in her lunch bag to take with her on the way out the door. They are a very inexpensive breakfast and other than the package of hash browns I usually have everything on hand to make them plus making them is quick and you’ll have several breakfast treats ready!

This makes 12 muffins, put 2 in foil after you make them, then just pop them in the oven to reheat when you need them!
So Take that and make This!
1 32 oz package of shredded hash browns
1/2 onion diced
1 Tbsp garlic powder
1 Tbsp season salt
2 Tbsp melted butter
1/2 cup of grated Parmesan Cheese, divided
1/4 cup of shredded Cheddar Cheese
Preheat oven to 350 and grease muffin tin
Combine hash browns, onion, garlic powder, salt, eggs, butter, 1/4 cup of Parmesan Cheese and scoop into well greased muffin tin. Bake in oven for 40 to 45 minutes until they brown and get crispy, then top with remaining Parmesan Cheese and cheddar cheese and continue to bake until cheese is melt if you are serving right away. If you are making them ahead, remove them from the oven top with remaining cheese, let cool completely and either wrap them in foil to store in the frig or wrap them in foil and store in zip top bag and store in freezer until you are ready to serve. I wrap them in foil, because then they can go straight into the oven in the morning when you need all the help you can get in the morning! If straight from the frig, put your oven on warm and toss them in for 10 to 15 minutes until warm and cheese is melty, from the freezer preheat oven to 350 and put them for 15 to 20 minutes until hot and melty and you are a breakfast hero!
