Pineapple Grilled Salmon with snow peas

Spring, what’s that???  My calendar says spring is just around the corner and this weekend we Spring Forward, what a joke!  Right now there’s snow piling up outside my door and wind chills in the 20 expected tomorrow.  So what’s girl to do when all the articles you read are about Spring Break, and you have no chance of going……  You bring Spring Break to you!

This grilled Salmon marinated in Pineapple brings flavors and smells of Spring, not to mention it will help you fit into
the swim suit every article in the magazines that you read in the grocery store line will be talking about next!
The salmon is so juicy, the snow peas add a nice crunch add a side of rice and dinner is served in about 15 minutes of cook
time, WIN!   This is great to shake the winter blues and also perfect for a quick, light summer meal

1 lb of salmon fillets
1 can of pineapple rings, juice reserved
2 TBSP soy sauce divided
1/4 cup of water
12 oz fresh or thawed snow peas
rice cooked per directed

Drain the can of pineapple into and add 1 TBSP of soy sauce, pour over salmon and marinade at least an hour.  Preheat greased grill pan or outdoor grill and grill salmon for 15 minutes turning half way through, after 10 minutes put the pineapple rings on the grill and let them cook for about 5 minutes.  Meanwhile add remaining soy sauce and
water to saute pan, with salt and pepper and saute snow peas for about 15 minutes until tender crisp. Lay down a bed of rice top with snow peas and any sauce from the peas, then the salmon and finish off with the grilled pineapple, and dream
of summer!  Sunscreen always smells fruity so let the smells of pineapple take you to summer even if
it’s snowing outside your window. Your dining room at the beach!!!!!!!!!!!!!!!!
