Granola I know granola isn’t exactly an exciting food topic like knock ya naked brownies from Pioneer Woman, but better for you and I think it will taste better on Yogurt Parfaits. It’s a very simple granola that you can dress up anyway you want with simple additions, like dried cranberries, toasted coconut or even mini chocolate chips.

So you can take that and make this !!


3 cups of old fashioned oats

1/2 cup chopped pecans

1/2 cup unsweeted applesauce

1/4 cup honey

2 tbsp cinnamon(less if your not a cinnamon fan, but I love it and it has a lot of health benefits)

1/2 cup dried cranberries(optional)

1 cup of toasted coconut (optional)

1/2 cup of mini chocolate chips(optional)

Preheat oven to 325 degrees.  In a large bowl toss oats and pecans together then add applesauce, honey and cinnamon and stir together. It will take a few minutes until everything is coated, after it’s coated spread in a single layer on a baking sheet.  It’s important that it’s in a single layer or it will steam instead of toast.  Once it’s coated and a single  layer bake in the oven for 45 to 60 minutes stirring every 15 minutes until it’s slighty brown and toasty.

Once it’s done allow it to cool and if you want to stir in any optional ingredients stir them in and store in a air tight container.  I love the dried cranberries, but if coconut is your thing once you pull out the granola put a cup of coconut in a single layer on a baking sheet and toast in the oven until slighty brown and stir in when cooled.

I love to take a couple tablespoons and stir it into the yogurt parfaits to give it a little crunch and texture.

It’s a great way to start the day!
