Margarita Chicken

Holy Batman it is cold outside!!!

I know it’s winter, but really, it’s suppose to be 6 degrees tonite with a wind chill below zero, ugh! On the way home tonite from dinner we ran into a snow thunderstorm????  What the What?? Snow thunderstorms, naming snow storms, the weather people really need to stop doing busy work and just predict the weather right!
So since spring still a ways away I thought we’d bring spring into the kitchen, and what better way than having a Margarita, or at least chicken that reminds you of a margarita!

So you can take that


and make this

Margarita Chicken

  • 1 lb. of chicken breast strips or breast cut into small cutlets
    1/4 cup of tequila
    1/4 cup of lime juice
    1 jalapeno pepper sliced
  • 2 TSBP olive oil
  • 2 TSBP honey
  • 1 shallot
  • 2 cloves of garlic

Combine everything in a ziploc bag, let it marinade for at least an hour or over night.  Grill strips or cutlets for about 3 to 5 minutes in a grill pan or on an outside grill or until it registers 165 degrees on a meat thermometer. While the chicken grills empty marinate in a sauce pan and boil until it’s reduced by half, strain and serve over the chicken. Making this sauce really makes the chicken pop, and it can make an inexpensive side dish if you cooked some plain rice and put some sauce over it, then you don’t have to use a box rice mix and worry about what ingredients are in that!

Anyone concerned about the jalapeno, it doesn’t spice it up it just give flavor and the tequila also does the same.
